1 cup (240 ml) creamy ranch dressing
1/4 cup (60 ml) buttermilk
1 lb (450 g) ground beef
1 cup (150 g) corn kernels
1/2 cup (75 g) black beans
1 cup (150 g) cherry tomatoes
1/2 cup (75 g) red onion
1 cup (100 g) shredded cheddar cheese
1/4 cup (15 g) chopped cilantro
1 jalapeño, sliced (optional)
1 tsp (5 g) chili powder
1 tsp (5 g) ground cumin
Salt and pepper to taste
Instructions
Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta until al dente, approximately 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside, ensuring the pasta is completely cool to avoid melting the cheese when combined.
