1 cup long-grain white rice
2 cups chicken or vegetable broth
1 pound ground beef (or substitute with turkey, chicken, lentils, or quinoa)
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 cup corn (optional)
Shredded cheese (cheddar or Mexican blend)
Chopped fresh cilantro
Diced tomatoes
Avocado slices or guacamole
Sour cream or Greek yogurt
Hot sauce
Instructions
In a medium saucepan, combine 1 cup of long-grain white rice with 2 cups of chicken or vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and all the liquid has been absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.
While the rice is cooking, heat a large skillet over medium heat. Add the ground beef and cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and cooked through. Drain excess fat if necessary.
Add the diced onion and minced garlic to the skillet with the cooked ground beef. Sauté for 2-3 minutes until the onion is translucent and fragrant.
Stir in the taco seasoning and corn, cooking for an additional 2-3 minutes to allow the flavors to meld.
Gently fold in the drained black beans and let the mixture heat through for about 2-3 minutes.
Fluff the cooked rice with a fork and add it to the skillet with the taco filling. Stir gently to combine everything evenly and cook for another minute to warm through.
Spoon the taco rice mixture into bowls or plates and top with your choice of toppings.
