- 1/4 avocado, sliced (optional)
- 2 slices of cheese (cheddar, gouda, or your favorite)

Instructions
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
- Heat a non-stick skillet over medium heat. Add the butter, allowing it to melt and coat the pan evenly.
- Pour in the egg mixture and let it cook undisturbed for about 1 minute until it begins to set around the edges.
- Gently stir the eggs with a spatula, pushing them from the edges toward the center.
- Continue to cook, stirring occasionally, for about 3-4 minutes or until the eggs are softly scrambled and slightly runny.
- Toast the bread slices in a toaster or on another skillet until golden brown and crispy.
- Place one slice of toasted bread on a plate. Layer with cheese, followed by the creamy egg filling.
- If using, add the sliced avocado on top and finish with the second slice of bread.
- Optionally, sprinkle with fresh herbs for added flavor and visual appeal. Cut the sandwich in half diagonally and serve immediately.
