2 large carrots, peeled and grated
2 medium-sized apples, cored and thinly sliced (preferably Granny Smith)
1 cup fresh cranberries, halved (or 1/2 cup dried cranberries)
1/2 cup chopped fresh parsley
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon lemon juice
1 tablespoon honey (or maple syrup for a vegan option)
Salt and pepper, to taste
1/4 cup chopped walnuts or almonds
1/4 cup crumbled feta cheese (optional)
Instructions
Grate the carrots using a box grater or food processor and set aside in a large salad bowl.
Core and thinly slice the apples, toss them in lemon juice to prevent browning.
