2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon vegetable oil

8 oz rice noodles or egg noodles
4 cups water
1 tablespoon sesame oil
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon sriracha (optional)
3 cloves garlic, minced
1 teaspoon grated ginger
2 green onions, sliced
1 tablespoon sesame seeds
Fresh cilantro, chopped (optional)
Instructions
In a medium bowl, combine the chicken pieces with soy sauce and cornstarch. Season with salt and pepper. Let it marinate for at least 15 minutes.
Meanwhile, cook the noodles according to package instructions in boiling water until al dente. Drain, rinse under cold water, and toss with sesame oil to prevent sticking.
Prepare the savory garlic sauce by mixing soy sauce, oyster sauce, honey, rice vinegar, sriracha, garlic, and ginger in a small bowl. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until the chicken is cooked through and golden brown.
Reduce the heat to medium and pour the garlic sauce over the chicken. Stir well to coat the chicken evenly, allowing the sauce to thicken and become sticky. This should take another 2-3 minutes.
Add the cooked noodles to the skillet, tossing them gently to combine with the chicken and sticky sauce. Cook for an additional 2 minutes until everything is well-integrated and heated through.
