Ingredients

- 1 cup of cornmeal
- 1/2 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 tablespoon of sugar
- 1 cup of buttermilk (or regular milk + 1 tablespoon of vinegar)
- 1 large egg, beaten
- 2 tablespoons of melted butter
- Butter, for serving
- Syrup or honey, for drizzling
- Optional: Chopped green onions or jalapeños
- Optional: Fruits like blueberries or bananas
Instructions
- In a large mixing bowl, combine the dry ingredients: cornmeal, flour, baking powder, salt, and sugar. Mix well.
- In a separate bowl, whisk together the wet ingredients: buttermilk, beaten egg, and melted butter.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Avoid overmixing.
- Preheat a skillet over medium heat and lightly grease with oil or butter.
- Pour batter onto the skillet using a ladle, forming small pancakes. Cook each side for about 3-4 minutes until golden brown.
- Flip the hoecakes carefully using a spatula and cook the other side. Remove from the skillet and keep warm.
- Serve hot with butter and your choice of syrup or honey.
