  1. In a large mixing bowl, combine the dry ingredients: cornmeal, flour, baking powder, salt, and sugar. Mix well.
  2. In a separate bowl, whisk together the wet ingredients: buttermilk, beaten egg, and melted butter.
  3. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Avoid overmixing.
  4. Preheat a skillet over medium heat and lightly grease with oil or butter.
  5. Pour batter onto the skillet using a ladle, forming small pancakes. Cook each side for about 3-4 minutes until golden brown.
  6. Flip the hoecakes carefully using a spatula and cook the other side. Remove from the skillet and keep warm.
  7. Serve hot with butter and your choice of syrup or honey.
