Milk Brioche Rolls

Milk brioche rolls are soft, buttery, and slightly sweet, making them perfect for breakfast, dinner, or even as a snack. These rolls are enriched with milk and butter for a rich, tender crumb and a golden, pillowy finish.

Ingredients

For the Dough:

  • 3 ¾ cups (450g) all-purpose flour
  • 1/3 cup (65g) granulated sugar
  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 tsp salt
  • 1/2 cup (120ml) warm milk (110°F or 45°C)
  • 3 large eggs, at room temperature
  • 1/2 cup (115g) unsalted butter, softened

For the Egg Wash:

  • 1 egg yolk
  • 1 tbsp milk

Optional Toppings:

  • Sesame seeds, poppy seeds, or coarse sugar

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, mix the warm milk and 1 tablespoon of sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes until frothy.

Step 2: Make the Dough

  1. In the bowl of a stand mixer, combine the flour, remaining sugar, and salt.
  2. Add the activated yeast mixture, eggs, and softened butter. Mix on low speed using a dough hook until the ingredients are combined.
  3. Increase the speed to medium and knead for 8-10 minutes until the dough is smooth and elastic. The dough will be slightly sticky but should pull away from the sides of the bowl.

Step 3: First Rise

  1. Transfer the dough to a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1-2 hours, or until it doubles in size.

Step 4: Shape the Rolls

  1. Punch down the dough and divide it into 12-16 equal pieces.
  2. Shape each piece into a smooth ball by tucking the edges underneath. Place the rolls on a greased or parchment-lined baking sheet, spacing them evenly apart.

Step 5: Second Rise

  1. Cover the rolls loosely with plastic wrap or a towel and let them rise for another 30-45 minutes, or until puffy.

Step 6: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).

Step 7: Egg Wash and Bake

  1. Whisk together the egg yolk and milk for the egg wash. Gently brush it over the tops of the rolls.
  2. Sprinkle optional toppings if desired.
  3. Bake for 15-18 minutes, or until the rolls are golden brown and sound hollow when tapped.

Step 8: Cool and Serve

  1. Let the rolls cool slightly on a wire rack before serving. Enjoy warm or at room temperature.

Tips

  1. Ensure Proper Dough Texture: If the dough is too sticky, add a tablespoon of flour at a time while kneading.
  2. Overnight Option: For convenience, let the shaped rolls rise overnight in the fridge. Bring them to room temperature before baking.
  3. Storage: Store leftovers in an airtight container for up to 3 days or freeze for longer storage.

Variations

  1. Sweet Brioche: Add 1/4 cup of honey or extra sugar for a sweeter roll.
  2. Savory Brioche: Reduce sugar to 2 tablespoons and add shredded cheese or herbs.
  3. Stuffed Rolls: Fill with chocolate chips, jam, or cream cheese before shaping.
