1 pound ground turkey
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
1 cup corn kernels, fresh or frozen
1 can (15 oz) black beans, rinsed and drained
1 can (14.5 oz) diced tomatoes with green chilies
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
2 cups shredded cheddar cheese
1 cup cooked rice
1/4 cup chopped fresh cilantro
1/4 cup sliced green onions
1 jalapeño, sliced (optional for extra spice)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add olive oil and cook the ground turkey until browned, about 5-7 minutes. Remove and set aside.
In the same skillet, add the diced onion and garlic. Sauté until onions are translucent, around 3-4 minutes.
Add the red bell pepper, corn, and black beans to the skillet. Stir occasionally, cooking for another 3-4 minutes.
Pour in the diced tomatoes with green chilies, ground cumin, chili powder, salt, and pepper. Stir well to combine, letting it simmer for 2-3 minutes.
Return the cooked ground turkey to the skillet along with the cooked rice. Mix thoroughly.
Transfer this mixture to a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
Bake in the preheated oven for 20 minutes, or until cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes before garnishing with cilantro, green onions, and jalapeño slices.
