  2. In a large skillet over medium heat, add olive oil and cook the ground turkey until browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the diced onion and garlic. Sauté until onions are translucent, around 3-4 minutes.
  4. Add the red bell pepper, corn, and black beans to the skillet. Stir occasionally, cooking for another 3-4 minutes.
  5. Pour in the diced tomatoes with green chilies, ground cumin, chili powder, salt, and pepper. Stir well to combine, letting it simmer for 2-3 minutes.
  6. Return the cooked ground turkey to the skillet along with the cooked rice. Mix thoroughly.
  7. Transfer this mixture to a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
