Mozzarella Bruschetta Chicken

  1. Preheat your oven to 375°F (190°C). Ensure your oven rack is in the middle position to allow even cooking of the chicken.
  2. In a large skillet over medium heat, warm the olive oil. Season chicken breasts with salt, pepper, and Italian herbs.
  3. Cook the chicken breasts in the skillet for 5-6 minutes per side, until golden brown. They should not be fully cooked.
  4. In a separate bowl, combine the diced tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Stir well.
  5. Transfer the chicken breasts to a baking dish. Place slices of mozzarella over each chicken piece and spoon the bruschetta mixture on top.
  6. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and the chicken reaches an internal temperature of 165°F (75°C).
  7. Once done, remove from the oven and let the dish rest for 5 minutes before serving.
