An easy and delicious Italian-inspired dish combining baked chicken with mozzarella and fresh bruschetta.
Ingredients

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs
- 2 cups cherry tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces fresh mozzarella, sliced
Instructions
- Preheat your oven to 375°F (190°C). Ensure your oven rack is in the middle position to allow even cooking of the chicken.
- In a large skillet over medium heat, warm the olive oil. Season chicken breasts with salt, pepper, and Italian herbs.
- Cook the chicken breasts in the skillet for 5-6 minutes per side, until golden brown. They should not be fully cooked.
- In a separate bowl, combine the diced tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Stir well.
- Transfer the chicken breasts to a baking dish. Place slices of mozzarella over each chicken piece and spoon the bruschetta mixture on top.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and the chicken reaches an internal temperature of 165°F (75°C).
- Once done, remove from the oven and let the dish rest for 5 minutes before serving.
